Try this twist on the classic lemon bar.
Crust:
1 1/4 cup flour
1/4 cup sugar
1/4 pound unsalted butter, softened
Filling:
1/2 cup sugar
2 tablespoons flour
2 eggs
1/4 cup fresh lime juice
grated rind of 2 limes
Grease and flour an 8 x 8 x 2 inch square baking dish.
Preheat oven to 350 F.
Prepare crust. In an electric mixer on low speed, mix
flour, sugar and butter until the mixture resembles coarse
crumbs. Press mixture into prepared pan. Bake 12 to 15
minutes or until crust is lightly browned.
Prepare filling. In a mixing bowl, using a wire whisk,
mix sugar, flour, eggs lime juice and lime rind. Mix until
well blended. Pour mixture over hot crust. Bake 10 to 12
minutes or until lightly browned and firm. Cool completely.
Chill and cut into squares.
